The Best, Easiest Spinach Artichoke Dip Ever! And A Bonus Link To Super Nachos!
Quick and So Good!
The best spinach artichoke dip in the world! At least according to the son of my best friend! I make it for him about once a month. In fact, it is probably that time again. I love it, but it is a just a little fattening...
This dip is made on top of the stove in a large pot (because the recipe makes alot)
- 4 Tablespoons of butter
- 3 green onions, chopped small
- 2 cloves of garlic, finely chopped
- juice of 2 lemons
- 1/2 teaspoon of red pepper flakes
- 1 teaspoon of salt
- 2 cans of artichoke hearts, packed in water and drained
- 1 16 ounce bag of frozen spinach, thawed (wrap in a dishtowel and wring out the liquid)
- 1 16 ounce container of good quality sour cream
- 1 8 ounce block of good quality cream cheese (I use Kraft cream cheese), room temp and cut into smaller pieces
Melt the butter in a large pot. Then add the garlic, green onions and saute gently. When the onions are just tender, add the spinach, artichoke hearts, salt, pepper and lemon. Saute gently for about 5 minutes, so that the lemon absorbs into the vegetables. Add the sour cream and cream cheese. Heat through, stirring constantly and making sure that all of the cream cheese has melted and combined with the other ingredients. Voila!
I serve this with pita chips, a warm baguette or simple Triscuits. My son and a few other guys that I know actually prefer this dip cold, but it is meant to be served hot. Enjoy!

Update: Every Saturday and Sunday, many people check out this dip recipe! I finally realized: It is football season and everyone is looking for those quick, easy snacks to serve for their football gatherings! The dip works for that, for sure! If you are interested in another, try the nachos that I have left a link for! Serve it during the afternoon and evening games! It is cheap, easy and hits the spot on football Sundays! Everyone will come in the kitchen at halftime, make themselves a big plate of these nachos and then you get the night off! It is substantial enough for dinner!
