Easy Bread: David's Favorite! Lemon Yogurt Bread!

Lemon yogurt in a bread recipe? It works! This easy bread recipe will delight not just the kids in your family, but the grownups as well! The last time I made this home made bread, I realized that two loaves were not enough. My granddaughter loves this bread recipe and I make it for her often. I used to make one loaf for everyone to share here, and then one loaf for her to take home. But then came David!

The last time my grandson was here, I had made this bread for his older sister. We were sitting at the dining room table and 2 year old David was running through the house, playing with the dog. The next thing I knew, this tiny, little devil had reached up and taken the plate of bread off the kitchen counter. The plate was almost as big as he was. He very carefully walked towards the table and put it down next to me. He pushed a chair beside me, climbed up and with a smile on his face, started eating. This became his personal loaf of bread. He did not want to share! It was his! Needless to say, now, they each go home with their own loaf of bread.

2 Loaves Of Lemon Yogurt Bread!

  1. 2 and 1/4 cups of flour
  2. 1 and 1/4 cups of sugar
  3. 1 teaspoon of salt
  4. 1/2 teaspoon of baking soda
  5. 3 eggs
  6. 1 Tablespoon of lemon zest
  7. 1 teaspoon of vanilla
  8. 1 cup of room temperature butter
  9. 1 cup of lemon yogurt (I have tried several different types. The bread is good with any lemon yogurt, but by far, Original Yoplait Lemon Yogurt is the best! Measure it out. It takes almost 2 containers to measure a full cup.)

I usually cream the butter first. Then add the sugar and eggs and mix those. The other ingredients can be added at the same time. Mix this on medium to medium high for a full 3 minutes. The batter will be very thick and you will have to spoon it into the bread pans.

This will make 2 loaves of bread. I have tried cooking spray, but the bread comes out of the pans much easier if you butter and then flour the pans. Bake at 325 degrees for 50-60 minutes. A toothpick inserted into the center will come out clean when the bread is finished.

Remove from the oven. Allow to sit about 5 minutes, then remove the bread from the pans. Allow to cool on a cookie rack or plates. It is time for the lemon glaze.

  1. juice of one lemon
  2. 1 cup of powdered sugar.

Mix together in a small bowl and when the bread is completely cool, brush the glaze on the top of the bread. If the glaze is too thick, add just a few drops of water at a time to bring it to a consistency that you can brush across the top. This bread freezes extremely well.

Changing the Yogurt Flavor!

I have thought about using yogurt flavors other than lemon. Lime would probably be good with some lime zest; Yoplait even has an orange yogurt that could work with orange zest. I think the combinations are probably only limited by the number of flavors available. Just make sure that you use the creamy, full flavored yogurts and steer clear of the low fat or fat free yogurts. The creaminess really does make a difference in flavor and texture.

Update 10/10: David and Jocelynn came to visit yesterday-had no lemon yogurt, but had Yoplait blackberry pomegranate. Used 2 containers of that and added a little lemonĀ juice. Also used the lemon glaze, and David's first stop was the bread plate. He smiled and said, "Mine, hamma?" Needless to say, they finished one loaf here and took the other one home.

They also devoured the peanut butter chocolate chip cookies!
